Weekly Blog for 2020 - 5th Week SUPERBOWL!!


We ending this week watching the Super Bowl!!! That didn't mean we didn't have to miss out on all the finger foods. Meanwhile, the week was filled with cold weather and long wet days. I hit Trader Joes a couple of times for the organic tofu and fresh veggies. Stop n Shop is the best place to get the Diaya Cheese Cutting Board cheese (not the original -- ewwww).


I'll start with Super Bowl Sunday. So I didn't want to spend the day in the kitchen and preferred to watch the pregame shows. Unfortunately, I made a mistake sending my hubby and 15yo to the store so they came home with alot of processed foods - but it was a once a year event, so I can tolerate it!! We tried Amy's Pizza and it was AMAZING for an easy treat. I cut it into bite sized cubes. The kids loved the Morningstar's Corn Dogs. They claimed it tasted like the dogs from the past (I wouldn't know... I didn't try them). I did make Buffalo Cauliflower and this time added a little sweetness to the recipe for a good balance. AMAZING! But the winner was the Supreme Nachos (pictured) that included the first time I tried the Trader Joe's meat crumble. Warm, goey cheese was the topping and the veggies were a touchdown!! Finishing off the night with homemade choc chip cookies was filling.


During the week, for a fast breakfast, Vans Gluten Free waffles are an easy toasting option. But the weekend, I made a shredded home fries that hubby said were "the best I ever had!!!!". I made such a large batch, we were able to have it two days in a row! They stayed well in the fridge and only required a simple heating up on a non-stick pan. One day with pancakes and another with homemade waffles and fruit.


Lunch was leftovers but one day I prepped peanut butter & jelly sandwiches - the kids were a little shocked but they got over it when I packed some yummy treats on the side like an apple and potato chips. One day, the kids had a day off which we spent at SkyZone so I prepared some black bean soup and served it with fresh bread made in the bread machine. The bread machine is the one of the best investments I ever made. I'll post a blog with how I use it and how EASY it is.


Dinners for the week started with a large pot of split pea soup. I used this a couple of times for lunches but the day I made the soup, I made croutons. Simply dice ANY bread you have into chunks. This week, I had some leftover rolls from the Beyond Burgers a couple of days earlier. This worked well because the rolls have so much crust and you get that crust on every crouton. Simply toss in olive oil and seasonings (I did garlic powder, salt, pepper, parsley) and then bake in the oven in a single layer @375f for about 10 mins or however crunchy you like it. Another night I made Tofu Teriyaki with some falafel and cauliflower rice.


The easiest dinner I made was saute'd broccoli and garlic tossed with pasta. I used some of the veggie broth I made last week (see previous post) to make it a little more soupy. I included some sliced melon and grapes to sweeten the deal. Another night I saute'd some peppers and onions along with Tofurky Sausage which was a complete meal without any other sides needed! But one night, it was back to back practices & games so we drove through White Castle for Impossible Sliders sans cheese. I skipped that meal as I did a fast that day.
