Weekly Blog 2020 - Week 9 - On the Go

It seemed like this was the busiest two weeks in a long time!! My canned soups that I made over the past few weeks came in handy!!!! When I was short on time, I was able to easily pop open a can, heat it up and pour it over either some rice or pasta. I also had to grab some Taco Bell for the family one night. Veggie bean burritos without the cheese!!! But for the days I did have more than 5 mins to cook, I pulled off some easy meals.


One dinner is pictured ... my nine year old is obsessed with cutting and seasoning potatoes. While we cooked them in the air fryer, I sautéed some Hydrated TVP and seasoned it with taco seasoning. A quick, nut-free vegan cheese sauce made from coconut milk, yeast, tapioca and seasoning topped it off!!!

Another night I tried Bubba Burger Veggie patties with some steamed/seasoned cauliflower. That dinner took all of 7 minutes. Three bean soup (I had previously canned) with some fresh green beans was perfect for a windy/cold evening and it only took minutes to hear while the green beans just had to washed!

On a Sunday, I cooked empanadas which was perfect for a long drive we had to a game so I packed them in a bag each wrapped with foil.

Lunch has been a little easier at least for my high schooler because she has come to appreciate the salad options! Too bad the middle school salad is prepared with ham on it! Yuck!!!! So there was a lot of pasta and veggies, rice and beans, leftovers. Fruit is always included !!


Alot of business lunches also so my go-to is a veggie wrap or a salad. I’m not a huge salad fan but it is usually the safest way to avoid any contamination especially at a diner.


Breakfast on the weekends are always a little indulgent since I like to make pancakes and waffles with fresh fruit but during the week it‘s more likely to be oatmeal, toast with butter or cereal.


I’m looking forward to getting some local produce as soon as the season starts but so far Costco and Stop n Shop have been my go to for organic produce.
