Weekly Blog 2020 - Week 6 A Failure in the Kitchen

Trying a new recipe can be a huge risk. I usually cover myself by making a "back-up" dish. This week was no different.


I have been diligently trying different recipes to make meaty, juicy burgers that compete with the store bought kinds. This week I tried a mushroom based recipe. It included mushrooms and rice as the primary ingredients. The mixing went well, the seasoning seemed on point yet when I placed them on the grill, they fell apart. To save them, I cooked them as a crumble and served it over pasta with some tomato sauce. It wound up being a huge success!! It just wasn't a burger! Instead, it was a great crumble replacement. Oh well!!


The pictured dish, however, was a success. This is a moroccan eggplant dish served with a side of cous cous and fries (which were my back-up). The fries are actually air-fried seasoned with Old Bay. Other dinners included grilled Torfurky Sausage mixed with veggie broth & spinach and served with pasta as a soupy dish--almost like an Italian Wedding Soup. One busy night on the way to sports, we stopped at Wawa and had burritos and rice bowls with rice & beans, lettuce, hot sauce & salsa. The meaty crumble concoction that was intended to be burgers was another dinner with steamed edamame on the side.


The beginning of the week, I prepared a large pot of chili loaded with protein and made some garlic bread on the side. I canned a few batches to have it for another day or for lunches. Just heat & eat! Another easy meal was Chick Pea rice which I got from Target mixed with diced broccoli and made with the same veggie broth! As you can see, the broth comes in handy! Lunches were either leftovers or the same on the go meals such as Acai Bowl from Costco ($4.99!!!!) topped with granola and berries.


One day, we spent the day traveling around. As you see pictured, first we hit a farm and learned how they tap maple trees to make maple syrup, then we stopped an all-vegan bakery to get some baklava, cupcakes and brownies. Our final stop was a pizzeria who created a vegan pizza made with

as the crust and topped with vegan cheese & meatless meatballs!! It was a great opportunity to enjoy foods outside of the home!
