Weekly Blog for 2020 - 4th Week - This week we had a CAKE!

Yes... that’s a double layer homemade cake! So easy, my 9yo made it! I’ll get to that later.


This week was a beautiful weather week so getting outside a lot helped us all feel great, however, it kept me out of the kitchen. A lot of prepping and thinking ahead was necessary.

Breakfast stayed consistent as far as convenience. Staples bananas sliced with PB and smoothies loaded with frozen fruit ( add a dash of hemp seed or flax seed for some additional fiber ). A couple of mornings, I made a batch of pancake batter and kept it on the ready for each breakfast shift. This is easy enough. A pot of oatmeal warm on the stove allowed for self-serving. One morning I had a breakfast meeting at conference so see my post about that challenge.


Lunch for the kids was leftovers from dinner the night before yet the days there were no leftovers, I made some pasta topped with sauce or cooked minute rice with beans. Snacks are peanuts, carrots and pretzels. For myself I whip up a fast hummus and munch on carrots or chips to dip. In a hurry, I made a PB and Jelly sandwich. Weekend lunch allowed me time to make Buffalo Cauliflower bites which didn't take much time at all. I used the air-fryer to make them crispy.


Dinners had to be planned. Some days I prepped in the morning before work. For example, I cooked the stuffing for Egg Rolls and let it cool in the refrigerator. When I was ready to roll and fry, it took about 5 mins to roll and 5 mins to cook. Another morning, I sliced a bunch of veggies tossed with oil and seasonings and left it in a bowl. Later, heated the oven and loaded the veggies onto a cookie sheet to roast. While they roasted, I air fried some tofu tossed with almond powder and seasonings. For one quick dinner, I grilled some Beyond Burgers and quickly cooked some lentils with onions and garlic with some broth.One evening I tried the Daiya Cheese Sauce over some pasta which doesn't require any time other than the boiling of the pasta!


On the weekend, kids had some friends over so I prepped some pizza dough. When I realized I didn't make enough, I ran to a local pizza place and bought one of their dough balls. It costed a whole $4. The kids got to put sauce and cheese and any other toppings. We also got to try a new place in town that offers vegan options. We ordered a sampler of falafel, hummus and olives along with their burgers and chips. A little costly so that was a treat.


CAKE!! The most exciting item of the week was the vanilla cake. My 9yo was inspired watching an episode of "Nailed It!" on Netflix. We replaced the buttermilk with almond milk mixed with vinegar. He make the frosting from scratch using all organic ingredients. He topped it with coconut shreds and chocolate chips. Better than any store bought cake!
